The origin of colour in raw sugar

In sugar mills juice is extracted from cane, then clarified, concentrated and crystallised into raw sugar. This process also extracts other compounds from cane, some of which are coloured while others are colourless, and converts a considerable proportion of them to complex colour in raw sugar. The current knowledge of the origin of colour in raw sugar will be discussed in this paper, particularly the role of phenolics.
