Estimating the recoverable sugar as extraction varies
By Edwards, BP
Crystallising sugar from a solution of sugar and impurities results in a two component mix of crystals and molasses. It is not possible to remove (by crystallising) all the sugar from the molasses and typically the final molasses is 45 true purity, that is the molasses has 45 parts of sugar to 55 parts of impurities. Looked at another way, for every part of impurity that comes in with the sugar juice, 45/55 parts of sugar will not be crystallised. This report considers how many impurities are extracted with each extra one per cent of pol and how this varies as extraction increases. This information is used to estimate how much sugar is recovered as raw sugar as extraction increases. The information available is limited and, considering how important the question is, more data are needed.
