The use of near infrared polarimetry to determine the polarisation of raw sugar

The elimination of the use of lead in the determination of the polarisation of raw sugars is receiving considerable attention due to environmental concerns about lead salts. One alternative to lead clarification of sugar solutions is the use of an unclarified solution and a polarimeter operating in the near infrared wavelength. The study reported here corroborates the work of Altenburg and Chou, and goes further in providing an explanation of the differences in results obtained with different raw sugars.
