Crystal growth rates in high grade massecuite boilings

Rates of crystallisation of raw sugar in high grade massecuite boilings were measured under normal processing conditions. Trials were conducted at several Australian factories in different regional areas to give guidelines to the maximum practical crystal growth rates that could be achieved, and to the amount of variation in growth rates that may occur. Results are applicable to both batch and continuous pans and will assist in the optimisation of operation of both types of units.
