An image analysis system for sugar crystal sizing

Image analysis techniques can be used to determine the size of crystals at the pan stage. Once a sample is prepared under a microscope, the size, the spread and, if desired, the size distribution of the crystals can be determined automatically. The accuracy of the results depends on the microscope magnification used, the crystal content and the number of crystals counted. Mis-oriented crystals and entrained air bubbles can be removed by the software.
